1-1/2 T. butter
2 T. flour
1 c. milk (1% low-fat)
1/2 c. Parmesan cheese (freshly shredded)
1/4 tsp. salt
1/4 tsp. pepper
pinch of paprika
1 tsp. hot sauce (optional

Directions:
Directions:
In skillet, melt butter over med.-high heat. Sprinkle flour and whisk constantly until mixture is golden and lumpy.

Gradually whisk in milk and bring to a boil.

Cook, whisking constantly for 2 min. or until thickened.

Add freshly shredded Parmesan cheese, salt and pepper and a pinch of paprika. Whisk until smooth and remove from heat. Use immediately.

If you prefer SPICY CHEESE SAUCE, add 1 tsp. of hot sauce.
