1/2 c. chopped sweet onion (Vidalia)
3/4 c. vegetable oil (divided)
1/4 c. cider vinegar (divided)
1/4 c. honey
1 T. Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Brown/saute onion in 1 T. hot oil in a medium skillet over medium heat. Stir often until onions are caramelized. Add 2 T. vinegar, stirring and loosening particles from bottom of skillet. Remove from heat and cool for 5 minutes.

In a blender, mix onion mixture, honey, mustard, salt & pepper and remaining oil and vinegar for 30 sec. or until blended. Cover and chill for 3-24 hrs.

Serve this dressing over mixed greens topped with chopped apples, toasted pecans or walnuts, dried cranberries and feta cheese.
