3 cloves chopped fresh garlic
1/4 cup chopped fresh parsley
1 bunch chopped shallots
1 chopped bell pepper
1 cup chopped onions
3 tablespoons Wesson oil
2 pounds hot smoked sausage cut up into small pieces fry to cook until half done
1 pound salt meat cut into small pieces boiled for 15 to 20 minutes then drained
1 pound black eyed peas, boiled until half done then drained
1 1/2 cups uncooked rice
6 cups chicken broth
Salt and pepper to taste

Cut salt meat up into small pieces and boil for 15 to 20 minutes and drain. Sauté onion, bell pepper, garlic and parsley in oil. Cook for about 10 minutes on moderate fire add salt meat, sausage, black eyed peas, chicken broth, salt and pepper. Bring to boil then add rice. When mixture boils again cover tightly and cook for 45 minutes. Do not uncover during this time!!! After cooked put shallots, mix and let it sit 5 to 10 minutes before serving.

I've tried many many recipes for Hoppin John, but I can tell you this one is the very best you'll ever make. I make this every New Years as do all of my family members.. Thank you Aunt Pat for this wonderful dish!!!!
