Ingredients:
Ingredients:
2 tablespoons rendered tallow (raw beef fat) in skillet
1 tablespoon flour
2 cups milk

Directions:
Directions:
When jerky is crisp, pound about 1 cup jerky and shreds. (I use an old flat iron and hammer, some like to put it through a meat grinder). Cook jerky and tallow in skillet slowly until it starts to brown. Add flour and salt, stir well. Add milk. Sometimes the jerky absorbs more liquid than other times. Add milk to the right consistency. If you are in camp and can't pound it, the Cowboys whittled it into a pan with water and stewed it awhile before making the gravy.

Personal Notes:
Personal Notes:
Our family has a great respect and love for the land, preserving it for future generations. My father-in-law, Stark Riggs, always said, "Land is one thing they don't make anymore, so hold on to it." His dream was to see that the land carried on for the next generations. Our family is honored to be included in the publication of "100 Years 100 Ranches" in Arizona Highways by Scott Baxter.
