2 pounds 2 inch cubed marrow gut
4 pounds diced sweet breads
1/4 pound diced liver (optional)
2 pounds diced heart
6 to 8 teaspoons salt
2 teaspoons black pepper

Directions:
Directions:
Use butcher steak and glands from head if they are available. Some people like to use 1 pound of diced stew meat. Put in large kettle and simmer slowly for four hours or until tender. Do not cook until marrow gut has collapsed. Use asbestos mat to keep from sticking. Do not add water. Fresh butchered marrow guts are best as they still have marrow in them. Those you buy now do not have as much.

NOTE: Words used for marrow gut: Marrow twist,
Chicken necks, Trepe de Leche, and if you live close to the border, Mexico Margut.
