# Ground chicken
1 Egg yolk
Generous handful of bread crumbs
1/2 Small onion
2 Garlic cloves, peeled
Handful fresh flat-leaf parsley, finely chopped
Salt and pepper
1 Tbsp. extra virgin olive oil
2 Tbsp. butter
1/2 Cup hot sauce (such as Frank's Red-Hot)
2 Scallions, finely chopped
1/2 Cup sour cream
1/2 Cup buttermilk or cream
1/2 Cup blue cheese crumbles
Couple handfuls of celery & carrot sticks

Preheat oven to 400 degrees.
Place chicken in mixing bowl, add egg & bread crumbs. Grate 3-4 tbsp. onion into bowl; then grate garlic. Add parsley and season with S&P. Mix thoroughly. Roll into 16 meatballs. Arrange on nonstick rimmed baking sheet and coat with olive oil. Bake until cooked thru and golden brown approximately 12-15 minutes.
While baking, melt butter in large skillet, add hot sauce and whisk. Toss meatballs in hot sauce and roll around to coat. Spike with toothpicks. Combine all but 1/2 tbsp. of scallions with sour cream, buttermilk, and blue cheese crumbles. Garnish dressing with reserved scallions and serve alongside meatballs on platter with celery & carrot sticks.
