1/2 cup vegetable oil
3 cups onions, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup celery, diced
1 poblano pepper, diced
2 tbsp kosher salt
1 1/4 tbsp cayenne pepper
1 tsp cajun seasoning
1 tsp granulated garlic
3 bay leaves
1 lb andouille sausage, sliced
1 1/2 lbs chicken (white or dark) diced
3 cups white rice
6 cups water
1 cup green onion, sliced

Directions:
Directions:
1. Heat oil in dutch oven or medium. Add onions, bell peppers, and celery. Cook until soft and caramelized for about 20 mins. Season with salt and pepper.
2. Add chicken to pan and stir to combine. Cook chicken for 5 mins then add the the sausage.
3. Add all dry seasonings to the pan along with the bay leaves.
4. Stir and cook for 5 mins. Add rice.
5. Stir and coat rice. Add water, stir once and cover.
6. Cook over medium for around 30 mins without stirring.
7. Taste and adjust salt and pepper if needed.
8. Once all water is absorbed and rice is cooked completely, remove bay leaves. Stir in green onions and enjoy!
