15-18 lb turkey
1 cup kosher salt
1 cup honey
2 gallons water
1/4 cup black peppercorns, whole
8 sprigs fresh rosemary

3 pds apple wood

Directions:
Directions:
1. Heat water, salt, and honey until luke warm and honey and salt dissolves. Cool completely.
2. Add turkey to brine with peppercorns and rosemary. Cover and brine 24 hours.
3. Remove turkey from brine and dispose of brine.
4. Smoke turkey for 8 hours.
