1 can (15 oz.) black beans, rinsed and drained
1 1/2 cups frozen corn, thawed (or a can of low sodium corn instead)
1/2 cup finely chopped green & sweet red pepper
1/2 cup finely chopped red onion
2 jalapeņo peppers, seeded & chopped
4 scallions, chopped
1 Tbsp. minced fresh parsley or cilantro
1/2 - 1 cup sour cream
1/4 - 1/2 cup mayo
2 tbsp. red wine vinegar (or lime juice if prefer)
1 tsp. ground cumin & chili powder
1/2 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper
Tortilla chips, regular or lime

Directions:
Directions:
In a large bowl combine the beans, corn, peppers, onion, scallions, jalapeņos and cilantro. Combine the sour cream, mayo, vinegar or lime juice and seasonings. Pour over corn mixture and toss gently to coat. Service with tortilla chips. Refrigerate leftovers. Note: I make ahead and refrigerate and serve cold. Yield: 4 cups
