2 (10 oz.) packages frozen chopped spinach
2 cups crushed stuffing mix
1 cup Parmesan cheese grated
1/4 teaspoon nutmeg
6 well beaten eggs
3/4 cup softened butter
Mustard Sauce
1/3 to 1/2 cup dry mustard
1/2 cup white vinegar
1/2 cup sugar
1 egg yolk

Squeeze moisture out of spinach, place in large bowl and mix remaining ingredients. Shape into balls the size of walnuts. Preheat oven to 350° and place balls on lightly greased baking sheet. Bake for 10 to 15 minutes. Drain on paper towels. Mustard Sauce. Mix mustard and vinegar in bowl, cover and let stand at room temperature overnight. In saucepan, add sugar and egg yolk mixture and simmer over low heat until slightly thickened. Dip cooked pom poms in mustard sauce and serve.
