4 large potatoes, peeled and sliced
4 c. chicken stock, plus more as needed
1 large clove garlic
1 c. shredded sharp Cheddar cheese, or a mixture of 1/2 sharp Cheddar and 1/2 smoked Gouda
1/4 fresh chives, chopped
s/p to taste
1 c. heavy cream OR half-and-half
1/4 c. crumbled sharp Cheddar for garnish

Directions:
Directions:
Place potatoes and 1 C. of the stock in the slow cooker. Cover and cook on high for 2 hrs. until potatoes are just tender.
Transfer two-thirds of the potatoes to a blender, along with the cooking liquid. Add the garlic. Blend to desired consistency.
Return potato puree back to the slow cooker and stir in the shredded cheese, the remaining 2/3 c. stock, and the chives. Cover and cook on low for 30 minutes. Add extra stock or water if the soup is too thick. Break up whole potato slices with fork to desired texture. Stir in cream and s/p to taste. Just before serving, sprinkle with crumbled cheese and serve immediately

This is absolutely better with Gouda!!!
Try 1/2 Cheddar, 1/2 Gouda.
Also, sprinkle with fresh chives on top before serving.
