(Salad:)
2 cans Black Beans (Drained and Rinsed)
1 cup uncooked rice
1 tsp. salt
2 cups frozen corn (thawed)
1/2 cup chopped red pepper
1/2 cup chopped red onion
1/2 cup chopped green pepper
1/2 cup chopped cilantro
1/2 cup chopped black olives
1 jalapeņo diced (optional)
1-2 Bags Tortilla Chips

(Dressing:)
1/3 c. olive oil
1/3 c. lime juice
1/2 tsp. salt
1 clove garlic, minced
1/2 tsp. cumin
1/2 tsp. cayenne pepper


Directions:

Cook rice. Meanwhile, in large bowl combine the Salad Ingredients. In separate bowl combine the dressing ingredients. Chill both for a while until ready to serve. Pour dressing over entire salad mixture. toss well. Serve with tortilla chips or scoops. Stir occasionally.
