12 large stuffing mushrooms
1 sleeve Ritz Cracker
1 small onion
1 stalk celery
1 stick butter
Chicken Stock to taste
Grated Cheese

Directions:
Directions:
Peel and de-stem mushrooms. In saute pan melt butter. Add diced onion and celery. Add crushed Ritz crackers. Add little chicken stock if necessary to make a stuffing consistency. Stuff mushrooms, place in baking dish and sprinkle with grated cheese. Bake in oven 350 degrees for 30-40 minutes.

Jorge, my friend and cook at Rig A' Tony's always fights with me when I make the mushrooms. He always snickers under his breathe in his Dominican accent that he can make the mushrooms better than me. " What-ever Jorge" My mother taught me how to make these mushrooms!!!!!!
