6 oz. French bread baguette, cut into 1/2 cubes
4 slices hickory-smoked bacon
1 tbs. olive oil
1/4 cup red wine vinegar
1/4 tsp. black pepper (freshly ground)
1/8 tsp salt
6 cups torn romaine lettuce
1 1/2 # plum tomatoes, cut into 1/2" wedges
3 green onions, thinly sliced
1/2 cup (2 oz.) crumbled feta cheese

Preheat oven to 350 degrees.
Layer bread on Pam sprayed baking sheet.
Bake for 18 minutes or until toasted.
Cook bacon until crisp and cut into 1/2" pieces.
Reserve 1 tbsp. bacon drippings.
Stir oil into drippings, remove from heat.
Stir in vinegar, pepper and salt.
Combine lettuce, tomatoes, and onions in large bowl.
Drizzle with vinaigrette.
Add bread and toss well to coat.
Sprinkle with bacon and cheese.
Serve immediately.
Optional: stir in 1/2 cup cooked chopped chicken breast per serving for heartier meal.
Can also divide each serving on individual plate/bowl prior to drizzling vinaigrette and adding balance of ingredients for a personal salad.
