1 lb. orzo pasta
3 T. olive oil, plus 1/4 cup
2 c. fresh arugula (about 3 oz.)
3/4 c. crumbled ricotta salata cheese (or feta)
1/2 c. dried cherries
12 fresh basil leaves, torn
1/4 c. toasted pine nuts
4 T. freshly squeezed lemon juice
1 1/2 tsp. salt
1 tsp. pepper

Cook pasta until tender but firm to the bite, 8-10 minutes
Drain pasta and place on a large cookie sheet
Drizzle the pasta with 3 T. olive oil, toss, spread out and set aside to cool
Once cooled, add remaining ingredients and toss to combine
