2 1/2 lbs boneless beef chuck, cut into 1/2 in pieces
1 c coarsely chopped onion
1 c coarsely chopped green pepper
2 cloves garlic, minced
2 T cooking oil
1/2 to 1 tsp salt
1 (28 oz) can Italian plum tomatoes, broken up
1 c water
1 (6 oz) can tomato paste
3 T chili powder
1 tsp dried oregano leaves
1/2 tsp crushed red pepper flakes
1 (15 1/2 oz) can kidney beans, drained
6 T sour cream
6 T shredded sharp cheddar cheese
1/2 c chopped onion
1 avocado, cut into chunks

Directions:
Directions:
Brown beef, onion, green pepper & garlic in oil in large skillet or Dutch oven. Pour off drippings. Add salt, tomatoes, water, tomato paste, chili powder, oregano & crushed red pepper. Cover tightly and cook slowly for 1 1/2 hr until beef is tender. Add drained beans & continue cooking, uncovered for 20-30 min. Garnish each serving with sour cream, cheese, onion & avocado, as desired.
