Squash Casserole Recipe

2 1/2 lb. yellow squash
1/2 c. very finely chopped onion
3/4 c. fine dry breadcrumbs (1/2 cup for squash, 1/4 c for topping)
1/2 c. melted butter
1 tbsp. sugar
1/2 tsp. salt
2 eggs
pinch of pepper

Directions:

Preheat oven to 375ºF.
Cut peeled squash into 1" cubes (~5 1/2 cups). Cook in boiling salted water until soft ( about 20 minutes). Drain well.
Place cooked squash in a bowl and stir in onions, 1/2 c. breadcrumbs, 1/4 c. of melted butter, sugar, salt and pepper. Beat eggs and gently stir into the squash.
Use some of the melted butter to grease a 1 1/2 qt. casserole dish. Add squash mixture and drizzle remaining butter over the top. Sprinkle top with remaining breadcrumbs.
Bake uncovered for 45 minutes or until centre seems firm when dish is shaken.
