Muffins:
1 yellow cake mix
4 eggs
3 1/2 oz box lemon instant pudding
3/4 c. oil
1 tsp. poppy seeds

Frosting:
1 pound sifted powdered sugar
zest of 1 lemon
3 T. oil
3 T. water
1/3-1/2 c. lemon juice

Muffins:
Combine all ingredients and beat 2-3 min. on low and increase for 2-3 min. to cream. Spray mini muffin pan. Fill 1/2 full and bake at 350º for 12 min. Pop out on wire rack to cool.

Frosting:
Whisk together and dip muffins. To dip muffins, turn them upside down and stick prongs of fork in the bottom. You can double dip them. Centers will cave in and glaze will pool there.
