Potatoes:
2 pounds sweet potatoes, cubed
1/2 tsp. salt
1/2 tsp. black pepper
2 T. brown sugar
1 egg yolk
1 T. butter

Topping:
2 T. melted butter
3 T. brown sugar
1/4 c. chopped pecans
1/4 tsp. nutmeg

Directions:
Directions:
Cook sweet potatoes in boiling water till tender. Drain, cool, and peel. Mash until smooth. Mix salt, pepper, brown sugar, egg yolk, and butter. Beat until light. Spoon into an 8 inch square baking dish. Preheat oven to 350º.

For topping, combine butter, brown sugar, pecans, and nutmeg. Spread over potatoes. Bake for 35-40 min. Let sit for a few minutes before serving.
