3/4 cup all-purpose flour
1/2 cup brown sugar
1 T brown sugar
3 T unsweetened cocoa
1/2 t baking soda
1/4 t table salt
1/2 cup water
1/4 cup unsweetened applesauce
1 1/2 t melted margarine
1/2 t cider vinegar
1/2 t vanilla extract

Directions:
Preheat oven 350 degrees. In a bowl, stir together flour, brown sugar, cocoa, baking soda, and salt. In a second bowl, stir together remaining ingredients. Pour water mixture over flour mixture and stir until batter is smooth. Pour into nonstick 12 hole muffin tins coated with cooking spray, filling half full. Bake until toothpick comes out clean about 18 to 20 minutes. Remove from oven and let cool before turning out to serve.
