1 tbsp sunflower oil
2 tbsp medium curry paste (such as korma)
2 400 g can chopped tomatoes
1 1/4 cups dried red lentils
10 fresh curry leaves
1 1/2 cups water

Directions:
Directions:
Heat oil in a saucepan over medium-low heat. Add the curry paste and cook for 1 minute, stirring until fragrant.

Add the tomatoes, lentils, curry leaves and water. Bring to the boil, then reduce the heat to low and simmer for 25 minutes or until thickened and the lentils have softened.
