500g fresh lean port, minced or finely chopped
2 tbsp water
2 tbsp lemon juice
2 tbsp fish sauce
1/2 tsp dried chilli
1 tsp finely sliced fresh chilli
1/2 large onion or 1 small onion, finely sliced
2 tbsp sliced spring onions, cut into 2cm pieces
2 tbsp roasted peanuts
2 tbsp finely sliced fresh ginger root
1 tsp fresh mint leves
2 tbsp chopped fresh coriander leaves and stems
6 large lettuce leaves

Garnish
roasted peanuts
1 tbsp finely sliced ginger
dried and fresh chilli
fresh mint and coriander springs
shallot curls
chilli flowers

Directions:
Directions:
In a large saucepan, slowly cook minced pork with water over medium heat until pork is cooked through but still tender. Remove from heat.

Add lemon juice, fish sauce, dried and fresh chilli. Stir and when cooled add onion, spring onions, peanuts, ginger, mint and coriander leaves. Toss lightly.

Serve on a bed of lettuce leaves. Garnish with mounds of peanuts, ginger and chilli. Decorate with sprigs of mint and coriander, spring onion slices or curls and chilli flowers.
