1 large cucumber - peeled, seeded and shredded, retain juice to muddle.

2 medium limes

4-8 mint leaves depending on size and your taste

8 oz. Good vodka

Simple syrup to taste

Sparkling water or lemon-lime soda
Large martini shaker

Directions:
Set four martini glasses in freezer to chill. Muddle first three ingredients together well. Add vodka and simple syrup (I use 1 Tbsp. per drink and then use finish with sparkling water ). You can adjust to your taste. Shake vigorously until frost forms on shaker. Strain into four martini glasses. Float a thin layer of sparkling water or lemon-lime soda on top and garnish with any of the first three ingredients.
