5 lb. chicken pieces
5 lb. potatoes
6 carrots
3 onions
4 celery stalks
3 cloves garlic, sliced or minced
salt and pepper or hot pepper to taste
olive oil
Optional: oregano, basil and/or parsley

Directions:
Wash the chicken thoroughly. Place a small amount of oil in the bottom of a large roasting pan. Place chicken pieces into the pan. Bake in a 400º F oven for 20 minutes.

Peel the potatoes and carrots. Cut the potatoes into 1 1/2" chunks. Cut the carrots and celery into 1/2" pieces. Slice the onions. Place the potatoes, onions, carrots, garlic and celery over the chicken. Bake for at least another 1 hour and 40 minutes to 2 hours. (Chicken broth can be added for extra moisture.)
