1 lb. pasta (spaghetti or other long pasta)
1/4 lb. string beans (stems removed from both ends)
3-4 medium red potatoes (peeled and quartered)
1 small zucchini, cut into 1 inch cubes (optional)
olive oil
salt

Preparation Time: 45 minutes to an hour (start to finish)

Bring a pot of salted water to boil and cook the string beans and quartered potatoes until tender. DO NOT DRAIN THE WATER.

Using a slotted spoon remove the string beans and potatoes from the pot and place in a covered dish or smaller pot to keep warm.

Cook the spaghetti and zucchini (if using) together in the same pot (with the same water you used to cook the string beans and the potatoes). Cook until the pasta is al dente. Note: You may need to add more salt to the water.

Drain the pasta with the zucchini but DO NOT drain away all the water. You will need this water to keep this pasta dish juicy. Leave about a quarter of the pasta water in the pot.

Add the previously cooked string beans and potatoes to the pot with the spaghetti and zucchini. Coat everything with olive oil for flavor and to add body to the juice. Let stand in the covered pot for approximately 15 minutes before serving to allow all the elements to incorporate. Enjoy!
