6 ripe tomatoes
1 cup parsley
1/2 cup bread crumbs
1/2 cup grated parmesan cheese
1 tablespoon capers (packed in salt--no vinegar) rinsed well
2 tablespoons olive oil

Directions:
Directions:
Slice tomatoes about 1/4 inch thick and place on greased baking pan.
Finely chop parsley and mix with bread crumbs and cheese. Thoroughly chop capers and add to parsley mixture. Add olive oil and mix well.
Spread portion of mixture on top of each tomato slice and bake at 400 degrees until just browned.
