1 lb. butter 9 tbsp. strained lemon juice 4.5 tsp grated lemon rind 6 eggs 2 cups sugar

Directions:
Directions:
Put butter, juice, & rind in a heavy-bottomed pot on low. Cook gently, stirring occasionally, for 10 minutes. Beat eggs & sugar together until well blended (I use a whisk). Pour into lemon mixture and stir until thick. Do not boil!! Pour into sterilized jars. Makes 4 or 5 half-pints.
