12 roma tomatoes, seeded and chopped
2 tsp of crushed fresh ginger
juice of 1.5 limes
5 green onions, chopped
a handful of fresh cilantro, chopped
3 tsp rice vinegar (or more)

Directions:
Directions:
Chop the tomatoes, onions cilantro and mix together. Add the crushed ginger, cilantro, lime and vinegar. Refrigerate for a few hours before serving. Serve with tortilla chips.

Mom, Dad, Guff, Chris and I took an awesome trip the summer of 97 and had some Chips and Salsa in Santa Barbara that were AWESOME! This asian fusion influenced salsa is wonderful!
