4 fish fillets (I like tilapia)
salt and pepper
garlic powder
6 tablespoons butter divided
flour for dusting
1 -2 garlic cloves minced
2 tablespoons small capers (the smaller the better), drained
1/3 cup white wine
1 Lemon

Directions:
Fish can be fresh if you like. In a busy world I have found that the frozen option works if you put the love in preparing it.
Make sure it has no fishy smell
Rinse fish then dry on paper towel
melt 3 tablespoons butter in a med high pan
Salt and pepper and garlic powder the fish to your taste on bottom side (bottom side has a bright reddish middle).
Place in a med high pan with the butter melted
dust with flour
cook for 2 minutes
turn the fish
Salt and pepper and garlic powder the fish on the top side
dust with flour
cook for 1 minute
remove fish and put on a plate
place in a 225 degree oven

add 3 tablespoons butter to pan
add garlic and capers
cook for 1 minute
add wine
cook for 3 minutes
remove from heat
add lemon
add fish to sauce and serve
