1 lb. navy beans
1 1/2 lb. butt end of ham
8 c. water
Celery, diced
Parsley
Salt and pepper to taste
Grated onion
Grated carrot

Directions:
Directions:
Soak the beans overnight in enough water to cover. Drain off the water. Add fresh water and cook ham and beans until beans are tender. Beans will actually begin to dissolve. Include onion, carrot, parsley and celery to your liking. Season with salt and pepper.

I thought I knew how to make bean soup until I made it the first time after we were married. I was soon corrected and taught to make it just like my mother-in-law. Please note: carrot and parsley added in are my additions, although they are added in small quantities, cut up very fine and no one knows the difference.
