2 c. Zucchini, shredded
2 c. sugar
3 eggs
1 c. oil
1 1/4 tsp. salt
1 Tbsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
3 c. flour
3 tsp. vanilla
1/2 c. chopped nuts (your choice, our favorite is black walnuts)
1/2 c. raisins

Directions:
Directions:
Combine all ingredients in order as listed, except for zucchini, nuts, and raisins. Add these three last.

Pour into greased and floured loaf pans (2). Fill one pan 3/4 way, fill other pan 1/2 full.
Recipe makes one large and one small loaf. Bake at 350º for one hour.

Can be served plain, with cool whip, with icing, and is delicious frozen, too!
