2 1/2 to 3 lbs. boneless beef chuck roast
1 c.. barbecue sauce
1/2 c.. apricot preserves
1/2 med green bell pepper, chopped
1 T. Dijon mustard
1 1/2 t . brown sugar
1 med. red onion, thinly sliced
3/4 c.. mild or medium salsa
12 Kaiser rolls or hamburger buns, split and warmed

Directions:
Directions:
Trim fat from meat and cut into large pieces. Place in a crock pot.
Combine next ingredients. (except buns), pour over beef. Cover and cook on low for 9 hours or on high 4 1/2 to 5 hours, until beef is very tender.
Remove beef to a cutting board. Pull apart with a fork. Return shredded beef to the sauce in the crock pot. Serve on rolls or buns.
