1/4 c. oil
1/4 c. honey
1/4 c. molasses
2 eggs
1 c. milk
2 c. bran
1/3 c. rolled oats
1 c. wheat flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
3 Tbsp. flax seeds
1 c. apples (or raisins, dates, figs or carrots)

Directions:

Mix oil, honey, molasses, eggs and milk. Beat well. Mix bran, rolled oats, whole wheat flour, baking powder, salt, and baking soda. Fold in the seeds and apples.

Combine the liquids and dry ingredients. Mix briefly only until moist.

Spoon batter into greased muffin tins. Fill 2/3 full.

Bake at 375° for 18-20 minutes.

Elise has been a vegetarian since 2nd grade. In her readings about food and finding new recipes, she became interested in the many different grains, i.e., quinoa, bran, couscous. This recipe was from friends in the West Virginia community where she grew up. Dinner was always better with these Apple-bran Muffins.
