12 eggs
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. butter (melted)
16 oz. container small curd cottage cheese
8 oz. cheddar cheese (grated)
2 (4 oz.) cans green chilies
1/2 c. chopped onions (Dried onions can be substituted.)

In a large mixing bowl, beat eggs thoroughly. Add flour, salt, baking powder and butter. Mix. Add cottage cheese, cheddar cheese, chilies and onion. Stir. Pour into a greased 12x18" jelly roll pan. Bake at 350 degrees for approximately 40 minutes. DO NOT UNDERBAKE. It should show some golden brown color. Slice into 3-inch squares. Serve warm with salsa, if desired. Squares can be frozen and heated in microwave at serving time. Note: Recipe can be divided in half and baked in a 9x13" pan.
