1 Stick butter
2 Bunches green onions, chopped
1/2 tsp. Chopped garlic (the kind in a jar in olive oil is easiest)
4 tbsp. Flour (maybe 5 or 6)
3-1/2 Pints whipping cream
3 Chicken bouillon cubes
1 Large jar of pimentos with juice
8 tbsp. Mayonnaise
1 lb. Crawfish tails

Directions:
Directions:
Melt butter, saute green onions and garlic. Add flour to thicken. Add cream, pimentos, chicken bouillon cubes, salt and pepper. Cook slowly until bouillon cubes dissolve.

Add mayonnaise, stir to mix. Don't cook long because it will separate. Turn off heat, let cool.

Add crawfish tails. Heat when ready to serve but don't cover when heating.

Serve as a dip or over angel hair pasta.
