Un-cooked 8-9 inch pie crust
1-1/2 Cups - 1/2 & 1/2 cream
4 - Large eggs
1 1/2 C freshly shredded colby jack cheddar cheese
2 T Parmesan freshly grated

Seasonings to taste:
Salt
Black Pepper
Cayenne
Tony Chachere's Cajun Seasoning

Other ingredients to your liking:
Crumbled cooked bacon (4-5 slices)
Sliced fresh yellow squash
Sliced fresh zuchinni squash
1 - bag (10 oz.) Fresh spinach (cook in microwave 2-3 mins. to wilt)
Ham (1/4" dice)
Freshly sliced mushrooms
Etc.

`Preheat oven to 350º.

Thoroughly mix 1/2 & 1/2 and eggs and season to your taste.

Grate Parmesan cheese onto bottom of crust.
Layer 1/2 of the other ingredients in the bottom of the un-cooked pie crust, then pour on 1/2 of the seasoned cream & egg mixture. Then layer the other 1/2 of the other ingredients and cover with the remaining cream & egg mixture. Add shredded colby jack cheese. Cover quiche loosely with aluminum foil and bake for approximately 15 minutes. Bake additional 15 - 20 minutes uncovered until knife blade inserted in the center comes out dry.

If using spinach, I usually use crispy bacon and mushrooms. If using squash, I use ham and mushrooms.
