1/3 c. All-purpose flour
1/4 tsp. Red pepper
1/4 c. Cooking oil
3 c. Chicken broth (heated)
1/2 c. Chopped onion
8 oz. Smoked sausage
1/3 c. Chopped celery or bell pepper
2 Bay leaves
4 Cloves garlic, minced
1 Whole large chicken breast, cut cut
1/4 tsp. Black pepper
Hot, cooked rice

Directions:
Directions:
In a large, heavy saucepan or Dutch oven - combine flour and oil until smooth. Cook over medium-high heat for 5 minutes stirring constantly. Reduce heat to medium. Cool and stir about 15 minutes more or until roux is dark reddish brown. Stir in onion, celery or bell pepper, garlic, black pepper and red pepper. Cook over medium heat for 3-5 minutes or until vegetables are just tender-crisp stirring often. Gradually stir in hot chicken broth, sausage and gay leaves. Add chicken, bring to a boil and reduce heat.

Cover and simmer 20-30 minutes or until tender. Discard bay leaves and serve over rice.
