2 - Tbsp. vegetable cooking oil
1 - Medium yellow onion, chopped fine
3 - Red potatoes, peeled, washed and cut into 1/2" cubes
1/2 - Cup fresh parsley, finely chopped
Salt
Black Pepper

Directions:
Directions:
Pre-heat heavy cast aluminum or cast iron pot on high, add cooking oil. When oil is hot, add onions, stirring constantly until onions are translucent. Reduce heat to low, add potatoes, parsley, and seasonings to taste, stir until thoroughly mixed, and cover tightly.

Continue cooking, stirring occasionally, until potatoes are fully cooked.

SERVE HOT !!

TO MAKE HASH:

When you add the potatoes, add chopped, cooked corned beef or leftover chopped, cooked beef roast.
