1 ripe, firm mango
1 ripe, firm avocado
1 small red onion, finely diced
1 red chilli, finely diced
zest and juice of one line
2 tbsp pickled ginger, cut into fine shreds
1 tsp garlic
1 tbsp olive oil
1/2 tsp salt
freshly ground black pepper
1/2 cup coarsely chopped fresh coriander

Peel the mango, cut both cheeks from the stone and dice finely. Cut the avocado in half, remove the stone and using a large spoon scoop the flesh from the skin. Combine the avocado and mango with the rest of the ingredients and allow to sit for an hour for the flavours to marry
