2 T. olive oil, divided
1/4 c. chopped white onion
1/4 c. diced red bell pepper
1/4 c. diced green bell pepper
4 slices Italian bread (1/2 inch slices)
4 oz. leftover grilled chicken breast, thinly sliced
1/2 c. shredded Cheddar cheese
1/4 c. sliced drained pickled pepperoncini pepper

Directions:
Directions:
In a skill, heat 2 t. of the oil over med-high heat. Add onion, red pepper and green pepper; saute until softened, 7 to 9 minutes. Remove from heat and keep warm.
Brush one side of each bread slice with remaining oil. Place two slices on a work surface, oiled side down, and even layer chicken, onion mixture, cheese and pepperoncini. Cover with top halves, oiled side up, and press gently to pack.
Place sandwiches in grill, close the top plate and cook until golden brown, 3 to 4 minutes. Serve immediately
