1 onion – finely chopped
2 carrots – finely chopped
2 celery ribs – finely chopped
½ stick of butter
1 tbsp flour
1 cup chicken stock
4 cups (homegrown) tomatoes – peeled, deseeded, and diced
3 bay leaves
1 tsp sugar
Salt – to taste
Pepper – to taste
Red Pepper – to taste
2 tbsp parsley – chopped

Directions:
Directions:
Sautι onions, carrots, and celery in butter until soft.
Sprinkle in flour.
Add tomatoes and chicken stock.
Salt and pepper to taste.
Simmer for at least 2 hours.
Add additional chicken stock if too thick.
Throw in chopped parsley before serving.
Serve over angel hair pasta with a sprinkle of “stinky” cheese.

A food processor works well for chopping the vegetables. Also, you can blend the finished sauce in a blender to get a smoother consistency. This recipe easily doubles or triples.
