2 tsp vanilla
1 tsp soda
1 tsp salt
3 tsp cinnamon
1/4 tsp baking powder
2 cups zucchini -peeled and grated
3 cups flour
nuts (optional)

Mix together in order given. Bake in two greased and floured loaf pans for about one hour at 350º
