2 1/2 cups warm water
1/4 cup Honey
3 1/3 cups bread flour
2 1/2 cups whole wheat flour
1 1/2 teaspoons instant dry yeast, or 1 packet
1 Tablespoon kosher salt
Black sesame seeds, or other seeds

Directions:
Directions:
Combine flours in a mixing bowl fitted with a dough hook. Add warm water, honey and yeast. Mix on medium speed for 8 minutes. Cover bowl allow dough to rise for 1 hour. Punch down and allow to rise for 15 minutes. Divide dough, and with floured hands stretch sides under to form a round smooth ball. Place on a baking stone sprinkled generously with corn meal to prevent sticking. Sprinkle dough generously with water. Sprinkle with seeds. Allow to rise for 1 hour. Slash the top of the dough three times, and sprinkle again with water. Allow to rise 10 minutes. Pre-heat oven to 475. Place a tray of 3 cups of water on the bottom shelf of the oven. Place the baking stone with dough in the oven and reduce temperature to 450. Bake for 12 minutes. Remove the tray of water, and reduce heat to 425. Bake 20 minutes. Remove from the oven and place bread on a cooling rack for 20 minutes and serve.
