Albacore tuna 1 can,
1/2 red onion chopped,
1 red pepper chopped,
1/2 cup chopped parsley,
2 cloves garlic chopped,
1/2 to 1 cup greek or nicoise black olives cut in half,
4 or 5 small red potatoes chopped,
2 cups fresh green beans cut in half,
1 package mushrooms chopped,
1 to 2 tablespoons capers, drained,
1 cup extra virgin olive oil,
1/2 cup white wine vinegar,
1 tsp Dijon mustard,
1 tsp dried basil,
salt and pepper,
1 loaf crusty French bread

1. boil salted water in large pot,
2. when rolling boil add chopped potatoes and cook until just tender.
3. add green beans and mushrooms at end of cooking and par boil.
4. cool vegetables quickly in cold water with ice.
5. place fluffed/forked tuna in a large serving type bowl.
6. add minced garlic, chopped onion, chopped red pepper, capers, chopped olives, parsley and salt and pepper to tuna.
7. in a small beaker mix vinegar, mustard, basil and salt and pepper, with a whisk add oil to emulsify.
8. pour vinegarette over tuna and mix thoroughly.
9. add cooled vegetables to the tuna mix and gently fold together.
10. place in refrigerator and chill an hour.
11. serve chilled with toasted crunchy French bread.

Carly and Eve don't like the capers. Can use more or less oil depending on your tastes. Balsamic vinegar can be used instead of white wine vinegar. Other vegetables can be added or deleted depending on your tastes, carrots, zuchinni, cabbage etc. we usually have left overs, does improve with age.
