1 medium onion chopped
1/2 c butter
1/2 c olive oil
1 - 12 oz can tomato paste
1 - 2 lb can diced tomatoes (not drained)
2 - 15 oz cans tomato sauce
1 T salt
2 tsp pepper
1/8 rounded tsp garlic powder
1/3 c grated Parmesan cheese
3 tsp Italian seasonings

Brown onion very slowly in butter (take 20 minutes or so) over very low heat. Add olive oil and remaining ingredients. Simmer sauce about 2 hours over very low heat. Do not boil. Meanwhile, if meat is desired in sauce...brown 1 lb. of Italian sausage or 1 lb or hamburger seasoned with salt/pepper and Italian seasonings and crumble fine. Add to sauce after the 2 hours and then continue simmering over low heat for another 1 1/2 hour.

Makes enough for 1 1/2 lb of spaghetti

Freezes great...if you want to pre-cook spaghetti and I do that all the time for crowds of people...boil a very large pan of water with salt added, add spaghetti and cook for about 8 minutes. Drain spaghetti, saving water, reboil water add more spaghetti until amount desired is cooked. As the spaghetti is done..put in ziplock bags with 1 - 2 T of olive oil and mix well to keep it from sticking. Refrigerate until you want to use it and then reheat the water to boiling ...add the spaghetti and let it cook another 1-2 minutes. Serve. Can be made at least a day ahead for a time saver.
