2 T. olive oil
2 lbs. boneless pork, cut into 1 inch chunks
1/2 cup chopped onions
1 clove garlic, chopped
1/4 cup flour
2 cups peeled, chopped tomatoes (canned OK)
2 cups roasted, peeled and chopped fresh green chilis (Hatch) OR 2 7 oz. cans green chilis, drained and chopped
1 jalapeņo pepper, chopped
1 tsp. salt
1/2 tsp. black pepper
1 cup chicken or beef broth

Heat oil in large pan. Add pork and cook until lightly browned. Add onions and garlic and stir with meat. Add flour and stir 1-2 minutes. Add tomatoes, green chilis, jalapeņo, salt, and pepper. Add broth; lower heat. Cover pot and simmer 1 to 1 1/2 hours or until meat is tender. Serve with flour tortillas.
