2 garlic cloves
2 1/2 c. fresh basil leaves
1/4 c. fresh parsley
3 tbs. pine nuts
1/2 c. extra virgin olive oil
1/4 tsp. black pepper
1/2 c. freshly grated Parmesan cheese (see note below)

Directions:
Directions:
In a food processor, puree garlic. Add basil, spinach, and parsley. Process until finely chopped. Add pine nuts, finely chop. With the processor blades turning, slowly add olive oil in a fine steam until oil is absorbed. Add the black pepper. Just before serving, add the Parmesan cheese and blend in well, taste for seasoning. Serve over your favorite pasta or other recipe.

Note: Freezes well, but do not add Parmesan cheese before freezing. Add it when you serve the pesto.

Variant - to make a Spinach Pesto, reduce the basil to 1 1/4 c. and add one cup of fresh spinach.
