1 large can crushed tomatoes
1 large can plum tomatoes
1 small can tomato paste
1 small can tomato sauce
1 large onion, chopped
1/2 c. good red wine
4-6 cloves garlic, finely sliced
2-3 tbs each dried basil and dried oregano
2 bay leaves
Olive oil
salt, pepper to taste

Directions:
Cover bottom of a large saucepan with olive oil & heat on medium. When hot, saute garlic and onion for about 7-10 minutes. Add tomatoes, paste, sauce and wine, stir. Add basil, oregano, salt and pepper & bay leaves. Simmer for 2-3 hours. Remove bay leaves before serving or using in other recipes.

Note: To cut the tartness of the sauce, add 1/2 c. finely shredded carrot or a few sprinkles of white or brown sugar to taste.
