Crust:
2 sticks unsalted butter, softened
1/2 c. sugar + 3 tbs. sugar
1 tsp. vanilla
2 c. flour
Filling:
2 - 8 oz. cream cheese, softened
1/2 c. sugar
2 large eggs
1 tsp. vanilla
Topping:
4 Granny Smith apples
1 tsp. cinnamon
1/2 c. sugar
1/4 c. sliced almonds, blanched

Directions:
Preheat oven to 375°. Butter a 10" spring form pan. CRUST: Process butter, sugar and vanilla. Add flour, form a ball. Press onto bottom of pan, up 1" on sides. Freeze for 10 to 15 minutes or until slightly firm. FILLING: Beat cream cheese, sugar, eggs and vanilla together. Pour over crust. TOPPING: Peel, core and cut apples into 1/2" thick slices. Toss apples with cinnamon and sugar. Arrange over cheese filling. Sprinkle with almonds. Bake until top is brown, approximately 1 hour and 5 minutes. Cover and chill.
