1/2 c. onion, chopped
2 cloves garlic, finely chopped
2 tbs. olive oil
1 package frozen chopped spinach, thawed & drained
1 small can beans, drained & rinsed (kidney or black beans)
6-10 inch flour tortillas
3/4 c. picante sauce (mild or hot), divided
2 c. shredded mild cheddar cheese or Monterey jack cheese

Spray a 13 x 9 x 2 baking dish with cooking spray. Heat olive oil in a large nonstick pan. Add onion and garlic & saute until tender but not browned. Add spinach and beans & cook until heated through, about 3 minutes. Remove from heat. Preheat the oven to 375º. To assemble burritos, place about 3 tbs. of the spinach mixture on each tortilla. Add a tablespoon of picante sauce and 2 tbs. of shredded cheese. Roll tortilla and put seam side down in the baking dish. Prepare rest of the burritos. When done, top with remaining sauce and cheese. Bake uncovered about 20-25 minutes, or until dish is bubbly.
